Vegetable Chowmein is basically stirred and fried noodles with lots of veggies. These are smooth velvety noodles with crunch from the veggie which is flavored with Chinese sauces.

Ingredients

  • Chowmein – 100 g
  • Water, to boil – 2 glasses
  • Salt – 2 teaspoon or as per taste
  • Oil – 2 tablespoon
  • Butter – 1 tablespoon
  • Ginger, grated – 1 tablespoon
  • Garlic, grated – 5 to 6 cloves (Optional)
  • Capsicum, thinly sliced – 1 piece
  • Green Chilli, chopped – 2 medium sized
  • Red Bell pepper, thinly sliced – 1 piece
  • Carrot, thinly sliced – ½ piece
  • Cabbage, shredded – 50 g
  • Onion, sliced – 1 piece (Optional)
  • Paneer pieces, cube shaped – ¼ cup
  • Spring Onion, chopped – 1 tablespoon for garnishing
  • Red Chilli Powder – ½ teaspoon
  • Chilli Flakes – 1 teaspoon
  • Soya Sauce – 1 tablespoon
  • Tomato Sauce – 1 ½ tablespoon
  • Oregano(Italian Herbs) – ¼ tablespoon
  • Black Pepper Powder – ¼ teaspoon
  • White Pepper Powder – ¼ teaspoon
  • Vinegar – ¼ teaspoon
  • Cheese Cube, grated – 2 cubes (Optional)

How to make Veg Chowmein

Boiling the Chowmein

       Method 1 – In a Cooker
  • Take two glasses of water in a cooker. Add a teaspoon of salt and a teaspoon of oil to the water.
  • When the water boils, add noodles.
  • Cover the cooker with lid and take 1 whistle.
  • Open the lid of the cooker and check the noodles.
  • Drain the hot water from the noodles through a sieve.
  • Wash twice with cold water and drain in a sieve.
  • Washing with cold water prevents further cooking.
  • Add 1 teaspoon of oil to it and gently mix them. This will ensure noodles do not stick with each other.
  • Spread these noodles on a plate and let them cool down

        Method 2 – In a Pan
  • Take two glasses of water in a large pan Add a teaspoon of salt and a teaspoon of oil to the water.
  • Bring the water to full boil. Add noodles in boiling water.
  • After 3 minutes, check whether the noodles have boiled.
  • To check, take one noodle and press it. If the noodle easily gets pressed, then they are boiled otherwise boil them for some more time and repeat the step until properly boiled.
  • Drain the hot water from the noodles through a sieve. Wash twice with cold water and drain in a sieve.
  • Washing with cold water prevents further cooking.
  • Add 1 teaspoon of oil to it and gently mix them. This will ensure noodles will not stick with each other.
  • Spread these noodles on a plate and let them cool down.
Easy Chowmein Recipe
  • Please note, the cooking time of vegetables for making chowmein is very less, so you need to keep the vegetables ready before you start cooking.
  • Once all the vegetables are cut, put a large pan on the gas and put oil and butter in it.
  • Add grated ginger & garlic and chopped green chillies. You can also use ginger-garlic paste.
  • Saute them for 30 seconds only.
  • Put all the vegetables – red bell pepper, carrot, onions, cabbage, capsicum, paneer in the pan and saute them on a high flame. Do not cook the vegetables for more time otherwise the vegetables will become soggy.
  • After 2 minutes, make a gap in between the vegetables and add soya sauce, tomato sauce and vinegar in the specified quantities. Adding sauces in the gap will give noodles a smoky flavor.

  • Sprinkle salt, black pepper powder, red chilli powder, white pepper powder.
    Mix very well.
  • Lower the flame and add noodles and mix well gently with light hands such that the noodles do not break.
  • Sprinkle oregano, chilli flakes and add grated cheese.
  • Cover the pan with a lid or a plate and cook for five minutes.
  • Turn off the flame.
  • Garnish with spring onion and serve hot.

Tip 1

Add 1 teaspoon of oil to the noodles while boiling and 1 teaspoon of oil after draining the cold water as well. This will ensure noodles will not stick with each other.
