Cauliflower Vegetable
Cauliflower vegetable is an Indian dish which is generally prepared with potatoes. It is most popularly known as Aloo Gobhi. It can be made with multiple variations, for e.g., dry(sabji), semi dry or with curry. Every family has their own unique recipe to make aloo gobhi.
It is very helpful for those parents whose children do not like to eat gobhi. By preparing it with potato, children like to eat gobhi very easily.
Gobhi has high value nutrients such as Carbohydrates, Vitamin C, Calcium, Iron, Potassium and Magnesium. It is also a good source of fibres. Aloo Gobhi sabji also works as an immunity booster.
A perfectly made aloo gobhi has soft cooked potatoes and slightly crunchy cauliflower(which is not soggy). This can be served with chapati or roti or paratha. It is also prepared on festivals to be relished with hot pooris.

Ingredients (Servings - 4 people)
- Cauliflower – 500 g
- Oil – 2 tablespoon
- Potato – 250 g
- Ginger, grated – 1 inch long
- Cumin Seeds – ½ teaspoon
- Asafoetida(Hing) – 1 pinch
- Turmeric Powder – ½ teaspoon
- Red Chili Powder – 1 teaspoon
- Black Pepper Powder – ½ teaspoon
- Chana Masala – 1 teaspoon
- Salt – 1 teaspoon or as per taste
- Green Chili, chopped – 1 teaspoon
- White Pepper Powder – ¼ teaspoon
- Garlic, chopped – 1 teaspoon(Optional)
- Peas – 2 tablespoon(Optional)
- Lemon Juice – As per taste
- Coriander, chopped for garnishing
How to make Aloo Gobhi Sabji

Initial Preparation
- Cut the cauliflower and potato into bite-sized pieces & wash with water very well

Main Recipe
- Heat oil on a medium flame in a pan.
- Pour cumin seeds in oil and when it crackles, add hing, ginger, green chilies & stir for a few seconds. If you want to add garlic then, add garlic with ginger.

- Add cauliflower, potato, and peas to the pan.
- Pour salt and turmeric powder on it and mix well. Cover with a lid and cook it till they get half cooked.

- Keep stirring in between. Add all the masalas and mix very well.
- Again cook, till the cauliflower releases oil.

- Add chopped coriander leaves and mix well.
- Pour lemon juice drops before serving
- Enjoy this delicious cauliflower vegetable with roti or puri.

Tip 1
You can also add onion to this recipe. Add onion after adding ginger and green chilies and saute it.

You can also add tomatoes to this recipe. Tomatoes will be added after adding all the masalas when the cauliflower is half cooked.

You can keep the pan covered with a lid while cooking. Keep on stirring in between to avoid sticking at the bottom of the pan.
